Jackfruit has become a very popular ingredient within vegan cuisine, but often people struggle to cook it correctly in order to get that ‘meaty taste’. The key to making jackfruit is giving it a smokey bbq taste that’s almost similar to pulled pork in taste and texture but of course plant-based! This jackfruit bbq recipe is rich in meaty flavour, spice and is simply delicious! You can get all the ingredients from larger supermarkets.

This recipe doesn’t require any expert skills so don’t worry, it’s very easy to make! Serve with some rice and add some pine nuts or crushed dry roasted peanuts for an extra protein boost. Both pine nuts and peanuts work very well with the dish.

INGREDIENTS (3 portions):

Step 1: smokey bbq jackfruit ingredients:

  • 2 cans of jackfruit in water
  • 3 – 4 tbsp oil
  • 2 tbsp soy sauce (unsweetened – to taste)
  • 3 tbsp sweet chilli sauce
  • 2 tbsp tomato paste
  • 3 tsp smoked paprika powder
  • 1 tsp miso paste
  • 1 – 2 tsp minced garlic
  • 1 tsp onion powder
  • just under 0.5l of water

Step 2: other ingredients:

  • Cooked white or brown rice
  • 1 avocado (optional)
  • Pine nuts

METHOD:

Step 1:

Drain two cans of jackfruit. Roughly cut the jackfruit into smaller junks. Then fry them in a pan in 3-4 tbsp of oil for around 5 minutes on high heat. Then add all other smokedy bbq ingredients from step 2 and cook for another 20 minutes or until the jackfruit has softened. You should end up with an amazing tasting jackfruit in a delicious bbq sauce.

Step 2:

Serve with some rice and garnish with avocado. Add pine nuts for extra protein (or crushed salted peanuts would do nicely too). Enjoy!
